Meatless Monday Series: Mason Jar Tortellini-Spinach Salad

Mason Jar Tortellini-Spinach Salad

Ingredients:

  • 1 (19 oz) bag frozen cheese tricolor or regular tortellini
  • 1 pint cherry tomatoes
  • 8 tbsp Italian salad dressing
  • 4 (32 oz) mason jars with lids
  • 1 (8 oz) pkg mozzarella pearls
  • ¼ c basil leaves, chopped
  • 1 (5 oz) pkg baby spinach

 

Instructions:

  1. Bring a lg pot of water to a boil
  2. Cook the tortellini, then drain & rinse with cold water to cool
  3. Halve the cherry tomatoes
  4. Add 2 tbsp salad dressing to each jar
  5. Divide the mozzarella, basil, tortellini, tomatoes & spinach evenly among the jars in that order
  6. Seal each jar & refrigerate until needed
  7. Before eating, shake the jar to toss the salad
