Meatless Monday Series: Jackfruit Sliders

Jackfruit Sliders

Ingredients:

  • 1, 14-ounce can jackfruit, drained & rinsed
  • 1 tsp canola oil
  • 1 red onion, peeled & diced
  • ½ jalapeno pepper, seeded & minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 cup no-salt tomato sauce
  • ½ cup water
  • 4 slider buns

 

Instructions:

  1. Heat oil over medium heat
  2. Saute onions & peppers until translucent
  3. Add spices and cook for 1 minute
  4. Add jackfruit & liquid ingredients
  5. Bring to a boil & lower to a simmer
  6. Cook covered for 15 minutes on stove OR bake in oven for 15 minutes at 350 degrees
  7. Spoon filling over slider buns
