Jackfruit Sliders

Ingredients:
- 1, 14-ounce can jackfruit, drained & rinsed
- 1 tsp canola oil
- 1 red onion, peeled & diced
- ½ jalapeno pepper, seeded & minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 cup no-salt tomato sauce
- ½ cup water
- 4 slider buns
Instructions:
- Heat oil over medium heat
- Saute onions & peppers until translucent
- Add spices and cook for 1 minute
- Add jackfruit & liquid ingredients
- Bring to a boil & lower to a simmer
- Cook covered for 15 minutes on stove OR bake in oven for 15 minutes at 350 degrees
- Spoon filling over slider buns
