Cold Avocado Cucumber Soup

Ingredients:
- 2 avocados
- 2 English cucumbers
- 1 cup low sodium vegetable broth
- 1 cup plain nonfat yogurt
- ¼ cup green onions
- 2 tsp lime juice
- ½ cup ice cubes
- ¼ cup thinly sliced radishes (for garnish)
- Olive oil (for garnish)
Instructions:
- Halve and pit the avocados.
- Chop the cucumbers.
- Blend: vegetable broth, yogurt, green onions, lime juice, avocados & cucumbers.
- Add the ice cubes. Blend 1-2 minutes until smooth.
- Pour soup into bowls and garnish with radishes and olive oil.
