Meatless Monday Series: Cold Avocado Cucumber Soup

Cold Avocado Cucumber Soup

Ingredients:

  • 2 avocados
  • 2 English cucumbers
  • 1 cup low sodium vegetable broth
  • 1 cup plain nonfat yogurt
  • ¼ cup green onions
  • 2 tsp lime juice
  • ½ cup ice cubes
  • ¼ cup thinly sliced radishes (for garnish)
  • Olive oil (for garnish)

Instructions:

  1. Halve and pit the avocados.
  2. Chop the cucumbers.
  3. Blend: vegetable broth, yogurt, green onions, lime juice, avocados & cucumbers.
  4. Add the ice cubes.  Blend 1-2 minutes until smooth.
  5. Pour soup into bowls and garnish with radishes and olive oil.
