Meatless City Tacos with Walnut Filling

Ingredients:

  • 2 cups walnuts
  • 2 tsp canola oil
  • 2 cloves garlic, minced
  • ½ red onion, peeled & minced
  • 1 jalapeno, seeded & minced
  • 1 cup chopped bell pepper: seeded, cored & diced
  • 1 tsp chili powder
  • 1 tsp cumin-ground
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 2 tsp soy sauce
  • Juice of 1 lime
  • 8 corn tortillas
  • 2 avocados: peeled, pitted & sliced

 

Instructions:

  1. Grind walnuts in a food processor, soak in warm water for 30 minutes, then strain in a sieve
  2. Heat oil in pan,  saute’ veggies & add spices until translucent, then add walnut filling
  3. Stir, add soy sauce & lime juice, cook until walnuts are golden in color
  4. Spoon taco filling into tortillas & top with avocado
