Ingredients:
- Salmon fillet
- Zucchini
- Summer squash
- Red onion
- Butter
- Honey
- Chili powder
- Minced garlic
- Salt
Instructions:
- In a large bowl, mix together butter, honey, chipotle chili powder, minced garlic, and a pinch of salt.
- Season the salmon filets with salt.
- In another bowl, toss the sliced zucchini, summer squash, and red onion with a little oil.
- Lay out four pieces of foil and divide the vegetable mixture evenly among them.
- Place a salmon filet next to the vegetables on each foil sheet and drizzle the chipotle sauce over the top.
- Fold and seal the edges of the foil packets to create individual parcels.
- Grill the packets, covered, until the salmon is cooked through, rotating them halfway through. This process takes approximately 11-14 minutes.
